Ingredients

Large flour tortillas 2 burrito size, packed flat so they do not crack
Cream cheese 1/2 cup chive or garden vegetable flavor
Cucumber 1/2 cup seeded and sliced thin
Shredded carrot 1/2 cup
Red bell pepper 1/2 cup sliced thin
Baby spinach 1/4 cup
Salt 1/8 tsp

Method

  1. Lay a tortilla flat on a plate, cutting board, or a sheet of foil.
  2. Spread half the cream cheese to the edges. Go thicker than feels right; it is the moisture barrier.
  3. Pile on half the cucumber, carrot, pepper, and spinach in a line down the middle. Blot wet cucumber first.
  4. Salt lightly, roll tight, and cut in half. Repeat with the second tortilla.
  5. Eat now. Assembled wraps go limp within the hour.

This one stays in the cooler category on purpose. Cream cheese is the structural element here, not a garnish: it glues loose shredded vegetables to a tortilla so the whole thing survives being held in one hand. Swap it for something shelf-stable and you get a wrap that sheds carrot with every bite.

The enemy is water. Cucumber and pepper both weep, and a tortilla that sits in that liquid tears when you roll it. Seed the cucumber, keep the cut vegetables dry and cold, and spread the cheese all the way to the edge as a barrier. Assemble per person, right before eating, and there is nothing to wash but the knife.

Packing

Slice everything at home and pack the vegetables in a lidded container with a paper towel on top to pull moisture. Portion the cream cheese into a small screw-top container so the main tub stays shut and cold. Tortillas ride flat in their own bag.

Variations

  • Swap the cream cheese for hummus and it becomes vegan and cooler-optional for a day.
  • A handful of shelf-stable salami or a foil pouch of tuna turns this into a real lunch.
