Ingredients

| Barbecue sauce | 2 tbsp | single-serve packets or a small squeeze tube |
| Honey | 1 tbsp | packets do not leak; squeeze bottles do |
| Yellow or dijon mustard | 2 tsp | packets from any deli counter |
| Instant mashed potato flakes | 1/3 cup | the thickener |
| Powdered egg | 2 tbsp | optional, stirred in at the end |
| Black pepper | a few grinds |
Method
- Bring 400 ml of water to a boil. Pull it off the flame.
- Stir in the potato flakes until the water turns thick, then add the turkey and ham with their pouch juices.
- Squeeze in the barbecue sauce, honey, and mustard. Stir over low heat for two minutes so the glaze coats the meat instead of sitting on top.
- If you carried powdered egg, whisk it with 2 tbsp of water first, then fold it in and hold on low heat for another minute until it sets into curds.
- Pepper it and eat from the pot.
The original version of this is a whole ham and a whole turkey breast cooked on a boat grill, then eaten as leftovers for three days. None of that travels. What does travel is the flavor logic: honey and mustard on the ham, barbecue sauce on the turkey, both of them sweet enough to make plain cooked meat worth eating. Foil-pouch turkey and shelf-stable diced ham get you the same protein with no cooler and no two-hour oven.
Potato flakes do the work a roasting pan used to do. Sauce alone slides off pouch meat and pools at the bottom of the pot; a thickened base holds it against the protein and stops you from drinking your dinner. The powdered egg is optional but it is the cheapest way to push this past 45 grams of protein, and it nods at the breakfast omelet the leftovers used to become.
Packing
Potato flakes, powdered egg, and pepper premix into one bag at home. Sauce, honey, and mustard packets go in a second small bag so a burst packet ruins nothing else. Meat pouches ride on top of the food bag where they will not get punctured.
Variations
- Skip the egg and pack a tortilla instead; the glazed meat makes a passable wrap for lunch the next day.
- A pinch of dried basil turns the leftovers into something closer to a deli sandwich filling.
- Swap the barbecue sauce for the honey mustard alone if you want the ham flavor forward.
