Ingredients

Dehydrated shredded hash brown potatoes 1 cup the shelf-stable carton kind, not frozen
Freeze-dried egg powder 6 tbsp equals about 4 eggs
Powdered whole milk 2 tbsp stands in for the milk in the casserole
Shelf-stable sausage crumbles 3 oz summer sausage diced fine also works
Sausage seasoning 1 tsp sage, fennel, paprika, red pepper
Freeze-dried shredded cheddar 1/3 cup or 1.5 oz of real cheddar if the weather is cool
Oil 1 tbsp
Salt and pepper to taste

Method

  1. Cover the hash browns with 250 ml of boiling water in the pot. Lid on, 10 minutes, off the flame.

An oven casserole does not travel, so this is the same five things cooked flat in a pot instead of baked. Everything that was refrigerated becomes powder: eggs, milk, and cheese all come dried, and the sausage is the shelf-stable precooked kind. The seasoning blend is there because plain crumbles taste like nothing.

Order matters more than technique. Potatoes have to soak first or they stay gritty, and the eggs go in last over low heat because powdered egg turns rubbery fast. Pull the pot before the eggs look finished; they carry enough heat to set on their own.

Packing

Hash browns in one bag. Egg powder, milk powder, seasoning, salt, and pepper premixed in a second. Sausage and cheese in a third.

Variations

  • Dried onion and bell pepper, soaked with the potatoes, add bulk for almost no weight.
  • A packet of hot sauce cuts through the fat.
  • Skip the pan and eat it as a bowl if you are only carrying a pot.
