Ingredients

Method
- Boil 500 ml of water. Pull about 100 ml into your mug and set it aside.
- Stir the brown sugar, honey, Dijon, and cider powder into the mug water. That is the glaze.
- Off the heat, add the potato flakes to the pot a handful at a time until it thickens.
- Tear or chop the ham in and fold it through. Pour in the oil.
- Pour the glaze over the top, stir once so it streaks rather than disappears, and grind pepper over it.
The original is a bone-in ham under a slow cooker lid for eight hours. None of that survives a pack, so what carries over is the glaze: sugar, honey, Dijon, and apple. Those four are the reason that dish tastes like anything, and all four exist in shelf-stable form that weighs almost nothing.
Potato flakes replace the roast as the bulk. Mixing the glaze separately in a mug matters more than it sounds. Stirred straight into the pot it goes flat and uniform; poured over at the end you get sweet and sharp in the same bite, which is the point of a mustard glaze. Cured ham is already salty, so no salt goes in.
Packing
Potato flakes, brown sugar, and cider powder go in one bag. Honey and Dijon ride in packets. Ham pouch separate, oil in a dropper bottle.
Variations
- A handful of dried apple rings, rehydrated in the glaze mug, gets closer to the original.
- Swap the potatoes for instant grits if you want it looser.
