Ingredients

Instant hummus powder 1/2 cup
Freeze-dried sweet corn 1/3 cup
Instant refried black beans 1/3 cup
Dried bell pepper flakes 2 tbsp
Dried onion 1 tbsp
Olive oil 1 tbsp dropper bottle
Lime powder or citric acid 1/2 tsp
Cumin, chili powder, salt 1 tsp total
Corn chips 1 oz carried whole, crushed on purpose only

Method

  1. Pour 350 ml of cold water into the jar or bag holding everything except the oil and chips.
  2. Seal and shake. Break up any dry clumps against the side of the container.
  3. Wait 25 minutes. In water under 50°F give it 40. The corn is the slowest thing in there.
  4. Stir in the oil, then eat with the chips as the spoon.

Heat kills appetite before it kills anything else, and a stove makes the problem worse. This is the same bowl you would build hot, rearranged so cold water does all the work. Instant hummus powder is the load-bearing part: it hydrates in minutes at any temperature and turns loose beans and corn into something thick enough to hold on a chip.

Freeze-dried corn is the limiting ingredient on time, so give it the full soak rather than the ten minutes the beans need. Acid and oil go in at the end, both because the lime keeps its edge and because oil coats the dry powder and slows rehydration if you add it early.

Packing

All dry ingredients premixed into one bag or a screw-top jar at home. Oil in its own bottle, chips in their own bag so they survive the pack.

Variations

  • A foil packet of tuna or chicken if you are not keeping it vegan.
  • Swap the chips for a tortilla and roll it, which cuts the crumbs.
