Ingredients
| Instant refried bean flakes | 3/4 cup | |
|---|---|---|
| Instant rice | 1/2 cup | the parboiled kind that rehydrates off heat |
| Tomato powder | 1 tbsp | |
| Chili powder and cumin | 1 tsp total | |
| Olive oil | 1 tbsp | dropper bottle |
| Salt | 1/2 tsp | |
| Corn chips | 1 oz | crushed, on top at the end |
Method
- Boil 450 ml of water.
- Stir in the rice, cut the heat, and cover for five minutes.
- Add the bean flakes, tomato powder, and spices a spoonful at a time, stirring as you go. It thickens fast.
- Pour the oil over and stir it in. Salt to taste.
- Crush the chips over the top and eat straight from the pot.
The note that came with this one was a dead link and a backpack thread, so treat the numbers as the recipe and nothing else. What it is: two dry starches that rehydrate at different speeds, staged so you only boil once.
Rice goes in first because it needs the full heat of the water. Bean flakes go in after, off the flame, or they seize into a paste before the rice is done. The oil is not a garnish. Beans and rice are lean, and without added fat this lands closer to 500 calories than 700.
Packing
Rice, beans, tomato powder, spices, and salt go in one freezer bag at home. Oil and chips ride separately.
Variations
- A foil packet of tuna or a scoop of textured soy adds 15-20 g of protein.
- Powdered cheese or a hard cheese crumbled in works if you are not keeping it vegan.
