Ingredients
| Whole egg powder | 1/4 cup | reconstitutes to about 2 eggs |

| Water | 45 ml | cold, for the egg powder |
| Strawberry jam | 3 tbsp | single-serve packets, or rehydrated freeze-dried berries |
| Butter or ghee | 1 tsp | for the pan |
Method
- Stir the egg powder, cream powder, and sugar into 45 ml of cold water. Let it sit two minutes so the powder fully takes up the water. Lumps now mean lumps later.
- Melt the butter in a small pan over low heat. It should sizzle, not brown. A stove on full blast will scorch this before the middle sets.
- Pour in the batter. As the edges firm up, pull them toward the center with a spoon and tilt the pan so the loose egg runs into the gap.
- When the top is barely wet, spoon the jam over one half and fold the other half onto it.
- Slide it onto a plate and eat it warm. It goes rubbery once it cools.
A dessert omelet is the one sweet thing you can make with a pan, a spoon, and no oven. The original calls for two fresh eggs and cream, which is a refrigerator problem. Whole egg powder and powdered cream solve it without changing what happens in the pan: the same fat-to-egg ratio, the same set.
Heat control is the whole recipe. Low flame, edges pulled inward, jam added at the last second. Push the heat and you get a browned, tough disc instead of something that folds. Ghee holds up better than butter in a warm pack, and it will not burn as fast.

Variations
- Freeze-dried raspberries soaked in a splash of hot water replace the jam and weigh less.
- A spoon of cinnamon sugar over the top instead of jam if you want it drier.
