Ingredients

White bread flour 3 1/2 cups fine 000 flour if you can find it
Instant dry yeast 2 tsp instant, not fresh, so it keeps in the pack
Powdered whole milk 1/3 cup reconstituted with 1 cup warm water
Sugar 1/3 cup
Powdered whole egg 3 tbsp stands in for one whole egg and two yolks
Salt 1 tsp
Butter or shortening 4 tbsp softened; some for the dough, some for the pot
Thick fruit jam 3/4 cup apricot or plum, the stiffer the better
Powdered sugar 3 tbsp for dusting at the end

Method

  1. Stir the yeast, powdered milk, powdered egg, sugar, and salt into the flour while everything is still dry.
  2. Add 1 cup of warm water and 3 tbsp of the butter. Mix in the pot, then knead on a clean pot lid or cutting board for about eight minutes, until the dough stops sticking to your hands.
  3. Cover and leave it somewhere warm for an hour. In cool weather set the pot near the fire ring, not on it.
  4. Press the dough into a rough rectangle about a finger thick. Spread the jam over it, leaving a bare inch along one long edge.
  5. Roll it up toward the bare edge and cut into eight rounds. Grease the dutch oven with the last of the butter and set the rounds in cut side up, not touching.
  6. Lid on. Bake with roughly eight coals underneath and sixteen on top for 25 to 30 minutes, rotating the pot and the lid a quarter turn every ten minutes.
  7. Let them cool a few minutes, then sift the powdered sugar over the top.

This is a bakery roll rebuilt for a fire ring. Fresh milk and eggs are the two things that will not ride in a pack, so both come as powder and rehydrate in the same water that hydrates the dough. Instant yeast replaces fresh cake yeast for the same reason: it lives in the flour bag for months and does not care about temperature swings.

The jam has to be thick. A runny one soaks into the dough during the rise and the rolls bake into a wet layer instead of a spiral. Coal placement matters more than the count on the lid, so keep the heat weighted toward the top and turn the pot regularly or the bottom scorches before the middle sets.

Packing

Combine flour, yeast, powdered milk, powdered egg, sugar, and salt in one gallon bag at home. Butter goes in a screw-top jar, jam in a second jar or a squeeze tube, powdered sugar in a small bag.

Variations

  • Swap the jam for cinnamon sugar and chopped dried apple if you are worried about a jar leaking.
  • No dutch oven: bake them in a covered foil pan on a grill grate over low coals, checking at twenty minutes.
