Ingredients

Method
- Two hours before lunch, put the dried vegetables and corn in the jar with 240 ml of cold water. Seal it and let it ride in your pack.
- At the stop, add the hummus powder and lemon powder. Seal and shake hard for fifteen seconds.
- Wait five minutes. The powder keeps thickening after it looks done, so judge it late, not early.
- Pour the oil over the top, stir, and season. Eat straight from the jar.
The vegetables are the reason this needs lead time. Hummus powder rehydrates in minutes, but dried pepper and carrot need an hour or more in cold water before they stop being gravel. Starting them early and adding the powder at the stop keeps both parts right instead of splitting the difference.
Oil matters more than it looks. Hummus powder is mostly protein and starch, so without added fat this is a thin, chalky bowl for very few calories. A tablespoon of olive oil roughly doubles the payoff for a third of an ounce.
Packing
Hummus powder, vegetables, corn, and lemon powder go into one bag at home so camp is a single pour. Oil rides separately in a dropper bottle. A wide-mouth 48 oz jar with a screw lid is the right vessel: enough headspace to shake, and the lid seals between meals.
Variations
- Skip the two-hour soak and use the vegetables dry if you want lunch in five minutes. They will stay chewy.
- A packet of tuna or a few slices of hard salami turns it into a real dinner, and drops the vegan and vegetarian tags.
