Ingredients

Instant rice 1 cup parboiled, not raw long grain
Dehydrated refried beans 1/2 cup
Tomato powder 1 tbsp
Vegetable bouillon 1 cube
Cumin and chili powder 1 tsp
Olive oil 1 tbsp dropper bottle
Hot sauce a few dashes optional, travel bottle

Method

  1. Boil 400 ml of water in the pot and crumble in the bouillon cube.
  2. Stir in the rice, cover, and pull it off the heat. Let it sit five minutes.
  3. Add the remaining 200 ml of water, the bean powder, tomato powder, and spices. Stir until there are no dry pockets.
  4. Return it to low heat for a minute if it is too loose. It thickens fast once the beans hydrate.
  5. Pour the oil over the top, add hot sauce, and eat straight from the pot.

This is a dinner for camps where every liter of water came in with you: a jug in the truck, a dromedary in the canoe, whatever you filled at the last tap. Instant rice and bean powder both rehydrate at a fixed ratio, so you can measure the water once and not guess.

The order matters. Rice first in plain boiling water, beans second off the heat. Bean powder dumped in early glues to the bottom of the pot and scorches, and scrubbing a burned pot costs more water than the meal did.

Variations

  • A foil packet of tuna or chicken turns it into a bigger dinner and adds 20 g of protein.
  • Corn tortillas on the side if gluten is not a concern.
  • Dried onion and pepper flakes added at the boil give it more body.
