Ingredients

Method
- Film the bottom of a heavy skillet with the oil and set it over medium heat.
- Add the potatoes, onion, and pepper. Spread them flat and leave them alone until the bottom browns, then turn and brown again. Ten minutes or so.
- Beat the eggs with salt and pepper and pour them over the vegetables. Do not stir.
- Lay the cheese across the top, cover with a lid or foil, and drop the heat as low as it goes.
- Cook until the center is set and no longer shiny, eight to twelve minutes. Cut it in wedges straight from the pan.
This is the meal that eats the cooler. Half an onion, a stub of pepper, the last of the shredded cheese, the eggs you overbought on day one. Nothing here needs to be measured precisely, which is the point on a morning when you are also breaking down tents.
The order matters more than the ingredients. Browning the potatoes and vegetables first drives off water and builds a crust; pour the eggs in too early and you get a wet scramble instead of a sliceable round. The lid does the rest, trapping enough heat to set the top without a broiler. Keep the flame low once the eggs go in, since a camp stove runs hot in one spot and will scorch the bottom long before the middle firms up.
Packing
This is a cooler meal, not a pack meal. Dice the onion and pepper at home and bag them with the potatoes so camp prep is one dump. Eggs travel best cracked into a wide-mouth bottle the night before.
Variations
- Frozen hash browns work fine and thaw on the drive. Give them an extra few minutes to drive off water or the eggs will weep.
- A handful of chopped salami or pre-cooked bacon goes in with the vegetables.
- No cooler: swap in freeze-dried egg powder and dehydrated hash browns, rehydrate both with hot water, and cook the same way.
