Ingredients
| Lemon instant pudding mix | 1 box (3.4 oz) | instant only, not cook-and-serve |
|---|---|---|
| Whole milk powder | 1/2 cup | nonfat works but tastes thinner |
| Oreo cookies | 6 | regular |
| Lemon Oreo cookies | 6 |
Method
- Crush both kinds of cookies in their bag. A rock, a pot bottom, or the heel of your hand all work. Leave some pieces coarse.
- Shake the pudding mix and milk powder together dry in a quart freezer bag or a wide jar. Break up any clumps now, because they will not dissolve later.
- Add 350 ml of cold water. Seal, push the air out, and knead the bag for about a minute until there are no dry pockets.
- Let it sit twenty minutes. In cold weather it firms up faster; in heat give it thirty.
- Stir in half the cookie crumbs, scatter the rest on top, and eat it out of the bag.
The original is a refrigerator pie: crust, Cool Whip, two hours of chill. None of that travels. What does travel is the chemistry underneath it. Instant pudding sets on cold liquid alone, no heat, but it needs the calcium and protein in milk to do it. That is why powdered milk stays in and plain water does not work by itself.
Cool Whip and the crust are gone. The crushed Oreos take over the crust’s job, and doubling them makes up the calories the whipped topping was carrying. Skip the twenty-minute wait and you get lemon soup, which is edible but disappointing. Give it the time.
Packing
Pudding mix and milk powder go in one bag at home. Cookies go in a second bag, whole, and get crushed at camp so they do not turn to dust in your pack.
Variations
- A tablespoon of freeze-dried lemonade powder sharpens it if the pudding tastes flat.
- Swap the lemon Oreos for plain and add cocoa powder for a chocolate version.
- Sitting the bag in cold creek water for ten minutes gets it closer to the refrigerated original.
