Ingredients

English muffins or small bagels 6 split at home so you are not sawing bread in the dirt
Eggs 6
Olive oil 1 tbsp for greasing the cups
Salt and pepper to taste
Cooked bacon or breakfast sausage 6 oz cook it at home and reheat, or use precooked
Sliced cheese 6 slices
Chopped vegetables 1 cup bell pepper, green onion, red onion, tomato, cilantro
Avocado 1
Hot sauce or ketchup to taste

Method

  1. Build a bed of coals or get the fire down to a steady low burn. Full flames will scorch the eggs before they set.
  2. Oil each cup of a 6-cup muffin tin. Crack one egg into each and season.
  3. For a set yolk, pierce it with a fork and stir once. Leave it alone for a round yolk that stays soft.
  4. Set the tin inside a Dutch oven with the lid on, or on a grate over coals with foil over the top. Bake 12 to 15 minutes until the whites are firm and no longer clear.
  5. While the eggs bake, warm the meat and toast the split muffins on the grate.
  6. Run a knife around each egg and pop it out. Stack egg, meat, cheese, veg, and avocado on a muffin. The egg is hot enough to soften the cheese if you build fast.

This is a car-camp recipe because it needs a cooler, real eggs, and a tin. The point of the muffin pan is geometry: eggs baked in a cup come out as a disc that fits bread, so nothing hangs off the edge and nothing slides out on the first bite. It also cooks six at once without you standing over a skillet flipping one egg at a time.

The heat is the part that goes wrong. Coals, not flames, and a lid or foil over the top so the eggs cook from all sides instead of browning on the bottom. Every ingredient here is a topping bar, so lay it out and let people build their own. No dietary tags on this one: eggs, cheese, meat, and wheat muffins rule out all five.

Packing

Eggs travel in a rigid carton or cracked into a wide-mouth bottle at home, six per pint. Chop the vegetables at home and bag them. Meat and cheese ride in the cooler; muffins go on top of the pack so they do not compress.

Variations

  • Cracked-and-bottled eggs pour straight into the cups and skip the shell risk entirely.
  • Skip the meat and the tag list changes: with eggs and cheese still in, it is vegetarian only.
  • No muffin tin? Fry the eggs in a skillet and cut them to shape with the rim of a cup.
