Method
- Put the dried mushrooms in your mug with 150 ml of the boiled water. Let them sit ten minutes while you set up the rest. Keep that water.
- Heat the ghee in the pot and toast the bacon crumbles for a minute until they smell like bacon again.
- Add the mushrooms and their soaking water, then another 450 ml of boiled water, and bring it back up.
- Dump in the pouch contents and the spinach flakes. Stir, cover, and pull it off the heat.
- Wait ten minutes. Stir once at the halfway mark so the rotini on the bottom does not clump.
- Stir in the parmesan. Add the truffle oil off the heat, salt and pepper, and eat.
Emergency pouch meals are engineered to survive a decade in a bin, not to taste like anything. The fix is not more water. It is fat, salt, and something with actual texture. Dried mushrooms rehydrate into real bite, the bacon adds smoke and grease, and truffle oil gives the whole pot a smell the pouch could never carry.
The original is a home kitchen version with fresh mushrooms, butter, baby spinach, and a skillet. Everything here is the shelf-stable stand-in: dried mushrooms with their soaking liquid used as broth, freeze-dried spinach, precooked bacon crumbles, and ghee instead of butter. Add the truffle oil after the heat is off. It is volatile, and boiling it just wastes it.
Packing
Mushrooms, spinach flakes, bacon, and parmesan go in one bag; the pouch rides as-is. Truffle oil in a 5 ml dropper bottle, wrapped in a snack bag, because it will find a way to leak.
Variations
- No truffle oil: a pinch of garlic powder and extra parmesan does most of the same job.
- Any creamy freeze-dried pasta pouch works. Skip the added salt if the pouch is already heavy on it.
- Swap the bacon for a foil packet of chicken if you want the fat lower and the protein higher.
