No-Cook Almond Butter Wraps

Ingredients

Whole wheat tortillas 2 large flour tortillas keep better than corn
Almond butter 4 tbsp squeeze packets or a small screw-top jar
Honey 2 tbsp a squeeze bottle, not the sticky jar
Dried apricots 1/4 cup chopped at home
Sunflower seeds 2 tbsp

Method

  1. Lay a tortilla flat on a pot lid, a bear can, or the inside of your food bag.
  2. Spread 2 tbsp of almond butter across it, leaving a bare inch at one edge so it seals.
  3. Squeeze on 1 tbsp of honey. Thin layer. Puddles soak through the tortilla.
  4. Scatter half the apricots and half the seeds over the top.
  5. Roll it tight, starting from the loaded end. Repeat for the second wrap.
  6. Wipe the spoon before the almond butter hardens on it.

This is assembly, not cooking. The point is a breakfast you can eat standing up while the stove is busy with coffee, or skip the stove entirely on a morning when you want to be walking by six.

Roll them at breakfast rather than the night before. Honey migrates. Given eight hours it will find its way through the tortilla and leave you with something limp and translucent. Keeping the spread thin and the fruit in a separate bag until the last minute is the whole trick. The seeds are there for texture and a little more fat, and they hold up better than anything crunchy that has starch in it.

Packing

Tortillas ride flat in a wide zip bag near the top of the pack. Almond butter in single-serve packets so you are not scraping a jar in the dark. Apricots and seeds in their own small bag, added at assembly.

Variations

  • Peanut butter and raisins cost less and weigh the same.
  • Sub sunflower seeds for the almond butter and skip nuts entirely if someone in camp has an allergy.
  • A layer of instant milk powder mixed into the honey stiffens the filling for a wrap you want to carry a few hours.
