Method
- Open the chickpeas and pour off the liquid. Pack the empty can back out.
- Dump the chickpeas into a quart freezer bag. Press them flat with the heel of your hand until about half are broken and half are whole.
- Squeeze in the mayo, mustard, and lemon juice. Add the dill, onion powder, olives, salt, and pepper.
- Seal the bag with the air pushed out and knead it for thirty seconds.
- Cut a corner off the bag and squeeze the filling down the middle of each tortilla. Roll and eat.
This is a home kitchen recipe with the fridge taken out of it. The original leans on a jar of mayo and fresh dill; packets and dried dill do the same work and survive a warm pack all day. Canned chickpeas are heavy, which is why this belongs in a car, a boat, or a day pack rather than a week of backpacking.
Mashing only half the chickpeas matters. Fully mashed it turns into paste and slides out the end of the tortilla. Left whole it will not hold together at all. The lemon juice and mustard cut the mayo, which otherwise tastes flat once everything has warmed to ambient.
Packing
Spices go in one small bag mixed at home. Mayo and mustard packets ride in the same bag so you are not hunting for them. Tortillas stay flat against your pack's back panel or they arrive folded.
Variations
- Swap the tortillas for crackers if you want gluten-free; the filling already is.
- A pouch of tuna instead of half the chickpeas pushes protein past 30 g.
- Crushed potato chips inside the wrap add crunch and calories.
