Ingredients

Instant mashed potato flakes 1 cup
Butter 2 tbsp
Powdered milk 3 tbsp
Onion powder 1/2 tsp
Garlic powder 1/4 tsp
White pepper 1/8 tsp
Salt 1/4 tsp

Method

  1. Boil 300 ml of water.
  2. Add potato flakes and powdered milk. Stir until smooth.
  3. Add butter, onion powder, garlic powder, white pepper, and salt.
  4. Stir well and eat immediately. It thickens fast as it cools.

Powdered milk and butter replace fresh cream cheese and sour cream, keeping the dish shelf-stable and lightweight. The powdered milk prevents the potatoes from separating into soup as they cool, which matters when you are eating out of the pot.

One pot, one boil, five minutes total. It is a warming side that does not monopolize your stove.

Packing

Mix all dry ingredients into a single-serving bag at home. Butter wraps separately in foil.

Variations

  • Add bacon bits or a tablespoon of powdered cheddar for a loaded-potato flavor.
  • Stir in a teaspoon of miso paste in place of the salt for umami depth.
