Method
- Halve each orange across the middle. Cut a thin sliver off the bottom of each half so it sits flat and does not tip in the dirt.
- Run a spoon around the inside and lift the flesh out in one piece. Keep it. Cut it into wedges and set it on the side of the plate.
- Put the empty shells back in the cooler for ten minutes so they are cold when the ice cream goes in.
- Chop the candy on a plate or the back of a cutting board.
- One scoop of ice cream per shell. Scatter the chopped candy over it and stand a wafer bar in each one.
- Serve immediately. Orange shells insulate less than they look like they do.
This is a plating trick more than a recipe. Hollowing an orange gives you four disposable bowls that do not need washing and do not blow off the table, which is most of what a camp dessert asks for. The flesh you scoop out is not waste — cut into wedges it cuts the sweetness of the ice cream.
The limit is the cooler, not the technique. Ice cream only works when the cooler is packed hard with block ice and has not been opened all afternoon, so this is a car-camping or basecamp dessert and nothing else. Flatten the bottom of each half before filling it; a round shell rocks, and the scoop goes over the side.
Packing
Oranges travel loose in the cooler; they take a beating better than most fruit. Ice cream goes in the coldest corner, under the ice, not on top of it. Candy and wafer bars stay dry in a bag outside the cooler or they turn to paste.
Variations
- Swap in sorbet and skip the wafer bar for a dairy-free version.
- Scrape the shells clean, freeze them at home, and pack them pre-hollowed to cut camp prep to five minutes.
- Hollowed halves also hold whipped topping or a scoop of instant pudding if the cooler is not cold enough for ice cream.
