Ingredients

Tomato powder 1/3 cup stands in for a can of whole peeled Italian tomatoes
Dried basil 1 tsp crush it between your palms as it goes in
Salt 1/2 tsp
Ground black pepper 1/4 tsp

Method

  1. Boil 120 ml of water and pull the pot off the heat.
  2. Rain the tomato powder in while stirring. Dumping it all at once makes lumps you will not get out.
  3. Add the basil, salt, and pepper. Stir until it looks like sauce and not like soup.
  4. Let it sit five minutes covered. It thickens as it stands, so start thinner than you want.

The source version is a can of whole peeled tomatoes blitzed with basil, salt, and pepper. A can weighs 28 ounces and most of that is water, so the trail version starts from tomato powder instead. Add the water back at camp and you carry about an ounce per serving.

Whole peeled tomatoes are used because they are the least processed thing in the aisle and taste sweeter for it. Tomato powder loses some of that, which is why the seasoning stays short: salt and pepper do the lifting, and the basil goes in dry so it has hot water to open up in. Control thickness with water, not with cooking time. There is no reduction happening on a canister stove worth the fuel.

Packing

Powder and seasonings go in one small zip bag at home. Squeeze the air out; tomato powder cakes hard if it finds humidity.

Variations

  • Garlic powder and a pinch of oregano if you want it closer to a pizzeria.
  • A teaspoon of olive oil stirred in at the end carries the flavor and adds calories.
  • Thin it with another 60 ml of water and it becomes a soup base instead.
