Ingredients
| Biscuit mix | 2 cups | self-rising, shortening already cut in |

| Smooth peanut butter | 1/2 cup | |
| Strawberry jam | 1/2 cup | squeeze pouch or a small jar |
| Powdered sugar | 1 tbsp | optional dusting |
| Oil or shortening | 1 tbsp | for the pan |
Method
- Stir water into the biscuit mix in the pot until it holds together. Do not work it much past that.
- Pull off ten pieces and flatten each one into a rough disc on a clean lid or a sheet of foil.
- Spread peanut butter on five discs, spoon jam on top, and cap each with a second disc. Pinch the edges shut all the way around.
- Oil a skillet, set it over low coals or a low flame, and lay in as many pockets as fit without touching.
- Cover the pan. Cook about eight minutes a side, moving the pan off the hot spots so the outsides brown before the middles are raw.
- Let them sit two minutes, then dust with powdered sugar. The filling comes out hotter than the dough looks.
The original was a pan of refrigerated biscuits layered with peanut butter and jam and baked in an oven. Neither of those travels. Dry biscuit mix and water make the same dough at camp, and sealed pockets in a covered skillet do what the oven did, as long as the heat stays low.
Low heat is the whole trick. Biscuit dough browns fast and cooks through slowly, so a hot pan gives you a dark crust over raw flour. Keep the flame down, keep the lid on, and move the pan around. Sealing the edges properly matters too: an open seam dumps hot jam into the pan and burns it.
Packing
Biscuit mix and powdered sugar go in separate bags. Peanut butter and jam in squeeze pouches, not glass, and not in the same pouch.
Variations
- Skip the jam and use dried fruit soaked in a little water for something less sweet.
- Sunflower seed butter makes it nut-free.
- Wrap each pocket in foil and bury it in coals instead of using a skillet.
