Ingredients

Canned peach halves 2 halves single-serve plastic cup, no can opener needed
Powdered whole milk 3 tbsp stands in for the cottage cheese
Instant vanilla pudding mix 1 tbsp thickens without heat
Raisins 2 tbsp
Honey 2 tsp in a small squeeze tube
Cinnamon 1/4 tsp
Salt a pinch

Method

  1. Pour the milk powder, pudding mix, cinnamon, and salt into a mug or wide-mouth jar.
  2. Add about 60 ml of cold water a splash at a time and stir until it is thick and smooth. Add water slowly, it goes soupy fast.
  3. Let it sit two minutes to set up while you open the peaches.
  4. Set the peach halves cut side up, spoon the filling into the hollows, and scatter the raisins over the top.
  5. Drizzle the honey and eat straight out of the cup.

The original is a kids’ breakfast plate: a canned peach half with cottage cheese in the hollow and raisins for eggs. Cottage cheese does not travel, so the filling here is milk powder and a spoon of instant pudding mix, which thickens with cold water and no refrigeration. It sets to roughly the same texture and carries the cinnamon and honey better than curds would.

Canned fruit is heavy, so this is a car-camping or short-trip breakfast rather than a long-haul one. Buy single-serve plastic cups instead of cans and you skip both the can opener and the sharp lid, which matters when you are eating on a tailgate. Drink the syrup or dump it, but do not pour it into the filling.

Packing

Milk powder, pudding mix, cinnamon, and salt go in one small bag premixed at home. Raisins in another. The peach cup rides upright in a side pocket, and the syrup is drinking water if you want it.

Variations

  • Swap the peaches for canned pears or mandarin segments.
  • Skip the peaches entirely and eat the filling over cold-soaked oats.
  • Coconut milk powder in place of dairy powder makes it vegan and dairy-free.
