Method
- Burn the fire down to a bed of coals. You want steady low heat, not flame.
- Soak the banana chips in the 1 dl of water for five minutes, then mash them into the water with a spoon or the back of a fork. This is the blender step done by hand.
- Stir in the milk powder, egg powder and its water, honey, baking powder, salt, cinnamon, and last the oats. Mix until there are no dry pockets. Let it sit two minutes to hydrate.
- Grease a small metal mug or mini dutch oven. Pour in a third of the batter, drop the peanut butter in the center, and cover with the rest.
- Scatter the chopped peanuts and raspberries over the top. Lid it, set it on the coals, and bank a few coals on the lid.
- Bake 25 to 30 minutes. It is done when the center is set and a stick comes out clean. Rotate once halfway if one side is hotter.
The original is a home recipe: fresh egg, fresh milk, a real banana, a blender, an oven. All four of those got replaced. Powdered egg and milk carry the same structure without a cooler, banana chips soaked and mashed give the sweetness and binding of the fresh fruit, and a lidded mug buried in coals is close enough to 175 °C if you keep the fire low and covered.
The baking powder is what separates this from porridge. It lifts the oats into something cakelike, so the texture is worth the thirty minutes of sitting by a fire. The peanut butter in the middle stays molten and does not need to be stirred in; the raspberries go on top because they turn to mush if buried.
Packing
Oats, milk powder, egg powder, baking powder, salt, and cinnamon go in one bag at home. Banana chips, peanuts, and raspberries in a second. Honey and peanut butter in small screw-top jars or squeeze tubes.
Variations
- No coals? Same batter cooks in a covered pot over a low canister stove in about 15 minutes, though the bottom will brown harder.
- Swap the peanut butter and peanuts for sunflower seed butter and seeds to make it nut-free.
- Freeze-dried strawberries or blueberries work the same as raspberries.
