Ingredients

Peanut butter 1/3 cup the stiff commercial kind, not the oily natural stuff
Powdered milk 1/4 cup does the job flour does in a real cookie
Rolled oats 1/4 cup blitz them fine if you want a smoother dough
Brown sugar 2 tbsp
Chocolate chips 3 tbsp mini chips distribute better
Vanilla extract 1/2 tsp
Salt a pinch

Method

  1. At home, stir the peanut butter, brown sugar, vanilla, and salt together until it is one smooth mass.
  2. Work in the powdered milk and oats. It will fight you near the end. Keep going until no dry powder is left.
  3. Fold in the chocolate chips.
  4. Roll into eight balls, about a tablespoon each. Chill them for twenty minutes so they firm up before packing.
  5. On the trail, open the bag and eat them. Nothing else to do.

The store-bought freeze-dried version of this is a pouch of crumbles you eat with a spoon. Rolling it yourself gets you the same thing for a quarter of the price and in a shape you can eat one-handed while walking.

Powdered milk is the structural ingredient. Raw cookie dough gets its body from flour, which you cannot eat uncooked in any quantity; milk powder absorbs the peanut butter oil the same way and needs no heat. Oats add chew. Skip either one and you have peanut butter with chips in it, which will not hold a ball.

Nothing here needs cold storage. Peanut butter, milk powder, and sugar are all shelf-stable on their own, and mixed together they stay that way for a week of hiking easily.

Packing

Roll the balls, chill, then pack them in a small hard container. A bag works but they arrive as one lump. In hot weather they go soft; put them in the bottom of the pack against your back and they hold shape better than you would expect.

Variations

  • Swap powdered milk for powdered coconut milk and use dairy-free chips to make it vegan.
  • Sunflower seed butter in place of peanut butter for a nut-free version.
  • A tablespoon of whey or plant protein powder pushes each bite closer to real protein and stiffens the dough.
