Ingredients
| Thin-sliced stir-fry steak | 3/4 lb | slice it at home and freeze it flat; it thaws in the cooler by dinner |
|---|---|---|
| Montreal steak seasoning | 2 tsp | |
| Green peppers | 2 medium | diced large so they do not collapse |
| White onion | 1 medium | diced large |
| Powdered beef gravy mix | 3 tbsp | check the label if you need it gluten-free |
| Water | 1/2 cup | |
| Shredded or sliced cheddar | 2 cups | a block grated at camp keeps better than pre-shredded |
| Cooking oil | 1 tbsp |
Method
- Heat the oil in a large skillet over a medium flame. Add the steak and the seasoning and cook until the strips have lost their raw color, about four minutes.
The original bakes this under a sheet of crescent dough, which needs an oven and refrigerated tube dough. Neither travels. The filling was always the good part, so it stays and the lid becomes melted cheese instead of pastry.
Dicing the peppers and onion large matters more than it sounds. Small pieces turn to water in a hot skillet and thin out the gravy; big pieces hold shape and keep some bite. The gravy powder is doing double duty as salt and thickener, so add the water first and let it reduce rather than dumping in extra.
Packing
Sliced steak goes in a freezer bag, frozen flat, and rides at the bottom of the cooler as a second ice block. Gravy powder and seasoning premixed in one small jar. Peppers and onion can be diced at home and bagged.
Variations
- Skip the gravy powder and add a splash of soy sauce and a knob of butter for a thinner pan sauce.
- Spoon it into split rolls or over instant mashed potatoes if you want more calories per serving.
