Ingredients

Graham crackers 2 full sheets break to fit the iron
Milk chocolate bar 2 oz any thin bar melts evenly
Marshmallows 3 large
Cooking oil or spray a few drops keeps the sugar from welding to the iron

Method

  1. Burn the fire down to coals. Flames scorch the outside before the middle melts.
  2. Wipe both plates of the pie iron with oil.
  3. Lay a cracker in one plate, then marshmallows, then chocolate, then the second cracker on top. Cracked crackers are fine, the marshmallow glues them back together.
  4. Latch it shut and set it in the coals for about two minutes.
  5. Unlatch, look, then flip and give it another two or three minutes on the other side.
  6. Slide it onto a plate and wait a minute. Molten sugar burns.

A pie iron solves the one problem with s’mores over a fire: the marshmallow cooks from the outside in, so you get char before you get melt. Closed metal heats the whole sandwich evenly and the chocolate softens on the same schedule as the marshmallow. Nothing falls in the fire, either.

This is car camping food. The crackers are fragile and the chocolate needs a cool pack, so it does not travel far in a backpack. Coals matter more than time. Open flame will blacken the crackers in under a minute while the inside is still cold.

Packing

Crackers ride in a hard container or you will be eating crumbs. Keep the chocolate out of direct sun and away from the stove bag.

Variations

  • Swap the chocolate bar for a spoon of chocolate hazelnut spread if you are not feeding anyone with a nut allergy.
  • A thin layer of peanut butter under the marshmallow makes it a heavier dessert.
  • Sliced banana or a spoon of jam adds moisture if your crackers are stale.
