Ingredients

Freeze-dried pineapple 1 cup crushed small in the bag before you leave
Cream cheese powder 1/2 cup stands in for the 8 oz block
Powdered heavy cream 1/3 cup or full-fat milk powder plus 1 tbsp coconut oil powder
Honey powder 3 tbsp liquid honey works if you already carry it
Graham cracker crumbs 1/4 cup packed separately, added at the end
Salt a pinch

Method

  1. Pull out the graham crumbs and set them aside. Everything else stays in the bag.
  2. Add 120 ml of cold water to the bag, a third at a time, kneading between pours. Go slow. Too much water and it never thickens.
  3. Knead two or three minutes until it is smooth and holds a ridge when you drag a spoon through it.
  4. Let it sit ten minutes. The pineapple keeps drinking and the whip stiffens up.
  5. Stir in the graham crumbs, or scatter them on top so they stay crisp.

The original is a food processor job: fresh pineapple, a block of cream cheese, and whipped heavy cream, held together in a fridge for two hours. None of that survives a pack. Freeze-dried pineapple, cream cheese powder, and cream powder do the same three jobs dry, and rehydrating them in a bag replaces both the machine and the chill time.

Water is the whole game. The powders want very little, and the pineapple pulls back what the cream gives up, so the mix thickens on its own as it rests. Add water in stages and stop early — a thin whip cannot be fixed on trail, but a stiff one takes another splash fine.

Packing

Pineapple, cream cheese powder, cream powder, honey powder, and salt go in one heavy freezer bag at home. Graham crumbs ride in their own small bag; mixed in early they turn to paste.

Variations

  • Swap the pineapple for freeze-dried strawberry or mango. Same water, same method.
  • A squeeze of lime powder sharpens it back up if the honey takes over.
  • Warm water instead of cold makes it loose and pourable over oats the next morning.
