Ingredients

Instant white rice 1 1/2 cups dry
Venison jerky 3 oz cut into small pieces with scissors
Dried pineapple 1/2 cup chopped, unsweetened if you can find it
Freeze-dried peas and carrots 1/2 cup
Dried shallot or onion flakes 2 tbsp
Garlic powder 1 tsp
Powdered eggs 3 tbsp equals about 2 eggs
Soy sauce 3 tbsp in a leakproof bottle
Fish sauce 1 tsp
Oyster sauce 1 tbsp packets travel better than the bottle
Teriyaki sauce 1 tbsp
Cooking oil 2 tbsp
Black pepper to taste

Method

  1. Put the jerky, pineapple, peas and carrots, and onion flakes in the pot with 400 ml of water. Bring it to a boil and hold it there two minutes, then pull it off the heat and let it sit ten minutes. The jerky and fruit need that time to soften.
  2. Stir in the dry rice, cover, and leave it five minutes off the heat until the water is gone.
  3. Mix the powdered egg with 3 tbsp of water in a cup or the pot lid.
  4. Heat the oil in the pot over a medium flame. Push the rice to one side, pour the egg into the bare space, and scramble it until set, then stir it through.
  5. Add the soy, fish, oyster, and teriyaki sauces and the garlic powder. Keep it moving for three or four minutes so the bottom layer crisps without burning. Pepper to finish.

Fried rice at home wants day-old refrigerated rice, which is exactly what you cannot carry. Instant rice does the same job for a different reason: it is already cooked and dried, so the grains stay separate instead of turning to paste when they hit hot oil. Cook it with less water than the box says and you get something close to the dry, loose texture frying needs.

Fresh pineapple is water and weight, so this uses dried, rehydrated alongside the jerky in the same first boil. That step matters more than it looks. Jerky dropped straight into a hot pan stays leather. Ten minutes soaking in near-boiling water turns it back into meat. The four sauces are the whole flavor of the dish and none of them need refrigeration, so premix them at home and carry one bottle.

Packing

Jerky, pineapple, vegetables, onion, and garlic powder go in one bag; rice in another; powdered egg in a small bag of its own so it stays dry. The four sauces can be premixed at home into one 4 oz bottle.

Variations

  • Freeze-dried ground venison in place of jerky if you have a dehydrator at home.
  • Skip the egg and it is still dinner, just 6 g lighter on protein.
  • A squeeze of lime or a shake of chili flakes cuts through the sweet.
