Ingredients

White rice 1/2 cup long-grain cooks drier than short-grain
Salt a pinch

Method

  1. Bring 750 ml of water to a rolling boil in a pot with a lid.
  2. Add the rice and salt, stir once to break up any clumps.
  3. Cover the pot and reduce heat to the lowest setting.
  4. Set a timer for 15 minutes and do not open the lid.
  5. Remove from heat and let sit covered for 3 to 5 minutes.
  6. Fluff with a fork and serve.

The absorption method is the only way to cook rice when you cannot drain it. You start with exactly the right amount of water, apply heat until it boils, then let the rice absorb everything while a lid traps the steam. No burnt bottom, no excess water to deal with.

Rice by itself is calories and nothing else. It is the foundation of a hundred dinners depending on what you add before or after cooking. A can of beans, a foil packet of tuna, some dehydrated vegetables stirred in—rice becomes a complete meal with almost no added weight.

Packing

Measure dry rice into a quart freezer bag at home. A pinch of salt stays loose in the bag or rides in a small envelope.

Variations

  • Stir in a bouillon cube while the water is boiling for instant seasoning.
  • Add dehydrated vegetables before cooking for color and nutrition.
  • Top with canned beans or meat after fluffing for protein.
  • Cook with a cinnamon stick and a bit of sugar for a sweet version.
