Ingredients
| Instant white rice | 1 cup | the parboiled kind that rehydrates off heat |
|---|---|---|
| Dehydrated refried bean flakes | 1/2 cup | |
| Dried minced onion | 1 tbsp | |
| Taco or chili seasoning | 1 tbsp | |
| Olive oil | 1 tbsp | dropper bottle |
| Corn chips | 1 oz | crushed, added at the end |
| Salt | to taste | |
| Hot sauce | a few dashes | optional, packets work |
Method
- Bring 550 ml of water to a boil. Stir in the rice, onion, and seasoning.
- Cut the heat immediately. Lid on, ten seconds of shaking is not needed here, just leave it eight minutes.
- Open it up and rain the bean flakes in while stirring. They thicken fast, so go slow near the end.
- Pour the oil over, crush the chips in, and eat straight from the pot.
The bean flakes are the structural part. Instant rice alone drinks water and stays loose, but the flakes bind the leftover liquid into something you can eat with a spoon instead of drinking. Add them last and add them slowly, because they set faster than you expect and a clumped pot never fully smooths out.
Fat and salt carry this. The oil is most of the calorie load and the chips do the work a cheese or crema would at home, adding crunch and salt without anything that needs a cooler. Everything rehydrates off the flame, so one boil is the whole fuel cost.
Packing
Rice, bean flakes, onion, and seasoning go in one quart freezer bag at home. Chips ride in their own bag or they become powder. In a canoe, double-bag the whole thing; splash water finds everything.
Variations
- A foil packet of tuna or a handful of soy curls pushes protein past 30 g.
- Swap the seasoning for curry powder and use coconut milk powder in place of the oil.
- Skip the pot entirely by cold soaking, but budget an hour and expect firmer rice.
