Ingredients

Method
- Open the pouch, pull out the oxygen absorber, and stir the contents so the seasoning dust is not sitting in one corner.
- Boil about 580 ml of water. That is roughly 80 ml past what the pouch asks for.
- Pour it in, stir until nothing is dry, and press the seal shut. Fold the pouch over and sit on it or tuck it in a jacket to hold heat.
- Wait five minutes longer than the label says. Noodles and dumplings need the extra time or the centers stay chalky.
- Open it, fork in the chicken and the oil, and stir.
- Scatter the onions on top right before eating so they stay crisp.
Manufacturers write water amounts for the label, not for altitude, cold, or a pouch that has been sitting in a cold pack all day. Too little water and the starch on the bottom never hydrates. Adding a splash extra and waiting past the stated time costs nothing but five minutes, and it is the difference between a stew and gravel in warm broth.
The rest is arithmetic. A two-serving pouch is about one hiker dinner but is short on both fat and protein, so the meat packet and the oil go in. The onions are there for texture: everything in the pouch has the same soft, uniform bite, and one crunchy thing on top makes the whole bowl read as food.
Packing
Onions get crushed into powder if you bury them. Put them in a rigid container or high in the lid pocket. Squeeze the air out of the oil bottle and bag it with the meat packet.
Variations
- Instant potato flakes, a tablespoon at a time, will rescue a pouch you overwatered.
- A slice of hard salami chopped in works when you want fat more than protein.
- Powdered milk stirred into a stroganoff-style pouch makes the sauce behave.
