Ingredients

Dehydrated smoked pulled turkey 1.5 oz smoked and braised at home, then dehydrated
Chicken or turkey stock powder 1 tbsp
Dried onion and garlic 1 tbsp minced, from the spice aisle
Duck fat or lard 1.5 tbsp carried in a small container; cooking oil works
Dried herbs 1/2 tsp thyme, oregano, or a smoky rub
Salt and pepper to taste

Method

  1. Boil 350 ml of water in your pot. Stir in the stock powder and dried onion-garlic.
  2. Add the dehydrated turkey. Simmer for 10 minutes, stirring occasionally, until the meat plumps back up.
  3. Stir in the fat and herbs. Simmer another 3–5 minutes so the fat melts in and coats the meat.
  4. Taste and adjust salt and pepper. Eat straight from the pot or over grains if you're carrying them.

Wild turkey legs are dark meat from heavily used muscles that need patient, moist cooking to become tender. Smoking and braising at home breaks them down into pulled meat; dehydration then lets you carry a full meal’s protein without spoilage or significant weight. At camp, rehydration takes just 15 minutes.

Fat is essential here. Lean game meat dries out fast once cooked, and fat is what carries the smoked flavor and keeps the meat from tasting stringy. A tablespoon and a half will coat the rehydrated meat and restore the richness that three hours of braising created at home.

Packing

Portion the dehydrated meat into small bags or containers at home. Store the fat separately to avoid grease on other gear.

Variations

  • Serve over instant rice or pasta for a heartier meal.
  • Add a handful of dried mushrooms or cranberries for complexity.
  • For car-camping with a cooler and dutch oven, skip the dehydration: bring fresh turkey legs and braise for 2–3 hours over a campfire instead.
