Ingredients

Tender radish leaves or radish microgreens 1 cup, packed arugula, watercress, or mustard greens work the same
Grape tomatoes 1/2 cup they survive a pack better than a full tomato
Fresh mint leaves 2 tbsp, loose
Green onion 1
Lime 1 or 1 tbsp bottled juice
Olive oil 2 tbsp dropper bottle
Salt to taste

Method

  1. Stack the radish leaves and mint and cut them into thin ribbons. Older leaves get fuzzy, so cut those finer.
  2. Slice the green onion thin, white part included.
  3. Quarter the grape tomatoes over the bowl or bag so you keep the juice.
  4. Squeeze in the lime, add the oil, and salt it. Toss and taste.
  5. Eat it the same hour. The greens go limp in the dressing after that.

This is day-one food. Nothing in it is shelf-stable past the first afternoon, so it belongs in a cooler-adjacent car camp or the top of a pack on a short trip. What it buys you is acid and bite, which is exactly what freeze-dried dinners and canned beans are missing.

Radish greens are the point. They carry the same pepper as the root and usually get thrown out. Cut them thin and the tough ones stop being a texture problem. The oil is not optional either: it holds the lime and salt onto the leaves instead of pooling at the bottom of the bag.

Packing

Greens, mint, and onion travel whole in a hard container or they bruise into paste. Tomatoes go in their own bag. Cut everything at camp, mix in a freezer bag, and there is nothing to wash.

  • Spoon it over beans and rice or a foil packet of chicken.
  • Scoop it with rice chips or tortilla chips as a first-night appetizer.
  • No fresh greens on day three? Skip them and make it tomato, onion, mint, and lime.
