Ingredients

| Hard salami | 2 oz | dry cured, cut into coins at home |
| Sun-dried tomatoes | 2 tbsp | chopped small so they rehydrate |
| Bouillon powder | 1 tsp | |
| Olive oil | 1 tbsp | dropper bottle |
| Dried oregano and black pepper | 1/2 tsp |
Method
- Boil 350 ml of water with the bouillon powder and the chopped tomatoes. Let it go one minute so the tomatoes soften.
- Kill the heat. Dump in the couscous, stir once, and put the lid on.
- Wait five minutes. Do not lift the lid to check.
- Fluff with the spoon, then stir in the salami, oil, oregano, and pepper. The residual heat is enough to warm the salami through.
Couscous is the fastest hot dinner on a stove that runs on fuel you have to carry. It does not simmer. It sits off the heat in a covered pot and rehydrates on its own, which means one boil and no watching a flame.
The salami and oil are doing the calorie work. Couscous by itself is a starch with nothing behind it, and it goes down like paste. Fat and cured meat give it something to be. The sun-dried tomatoes need the boiling minute up front or they stay leathery in the finished pot.
Packing
Couscous, bouillon, tomatoes, and herbs go in one bag at home. Salami and oil ride separately so the dry mix stays dry.
Variations
- Swap the salami for a foil packet of tuna if you want it lighter.
- A handful of dried spinach flakes goes in with the tomatoes and disappears into the grain.
