Ingredients
| Pouched salmon | 5 oz | pouch, not can; no water to drain |
|---|---|---|
| Instant brown rice | 3/4 cup dry | the parcooked kind that rehydrates in ten minutes |
| Mayonnaise packets | 2 | single-serve, shelf-stable |
| Sriracha packets | 2 | |
| Honey | 1 tsp | a packet, or squeeze from a small tube |
| Tamari or gluten-free soy sauce | 2 packets | regular soy sauce if you do not need it gluten-free |
| Dried carrot shreds | 2 tbsp | |
| Freeze-dried avocado or dried scallion | 2 tbsp | |
| Sesame seeds | 1 tsp | |
| Salt, black pepper, onion powder, garlic powder | 1/2 tsp total |
Method
- Boil 350 ml of water. Stir in the rice, the dried carrot, and the spice mix.
- Cover, kill the heat, and let it sit ten minutes. Wrap the pot in a jacket if it is cold out.
- While it sits, squeeze the mayo, sriracha, and honey into a corner of the rice bag and mash it into a sauce. Add a few drops of water if it will not move.
- Fork the rice, then flake the salmon pouch over the top. Pour the soy sauce on.
- Spoon the sauce over, scatter the sesame seeds and the dried scallion or avocado, and eat from the pot.
The original is an air fryer dish, which is not a thing you carry. Pouched salmon is already cooked and already salted, so the fryer step disappears and the recipe becomes an assembly job: hot rice, cold protein, a sauce built in the bag.
The mayo-sriracha-honey mix does most of the work. Fat is what makes plain rice read as dinner, and single-serve mayo packets are the only shelf-stable way to carry it without a bottle that leaks. Dried carrot rehydrates in the same water as the rice, so nothing needs its own pot. Check your soy sauce if the gluten-free tag matters to you; most brands are brewed with wheat, which is why tamari is listed first.
Packing
Rice, carrot, spices, and sesame go in one freezer bag at home. Salmon pouch and the condiment packets ride in a second bag so a leak stays contained.
Variations
- Skip the stove and cold-soak the rice in 350 ml of cold water for an hour. Same bowl, no fuel.
- Instant white rice cuts the soak to five minutes if you would rather spend less fuel than chew.
- Swap the salmon for a tuna or chicken pouch. The sauce does not care.
