Ingredients

Powdered whole egg 3/4 cup reconstitutes to about 6 eggs
Shelf-stable precooked breakfast sausage 6 oz vacuum-sealed maple links, chopped
Dried diced onion 2 tbsp
Dried diced bell pepper 2 tbsp
Hard cheddar 2 oz grated at camp or diced
Real bacon bits 1/4 cup the shelf-stable jarred kind
Onion powder, salt, pepper 1 tsp total
Oil or ghee 1 tbsp
Flour tortillas 4 small

Method

  1. Cover the dried onion and pepper with about 60 ml of hot water and leave them for five minutes. They stay crunchy otherwise.
  2. Whisk the egg powder into 120 ml of warm water until no lumps remain. Do this before the pan is hot.
  3. Heat the oil, add the chopped sausage and the drained vegetables, and cook until the onion picks up some color.
  4. Pour in the egg. Stir slowly and scrape the bottom often. Pull it off the heat while it still looks slightly wet.
  5. Season, then fold in the cheese and bacon bits off the heat. Spoon into tortillas.

The original is an oven dish baked in tortilla bowls, which is not a thing you have at camp. Everything here does the same job in one pan: powdered egg instead of shells you would crack in your pack, vacuum-sealed sausage instead of refrigerated, dried onion and pepper instead of fresh. Soft tortillas replace the baked shells and pack better than anything rigid.

Rehydrating the vegetables separately is the step people skip. Dropped in dry, they pull water out of the egg and stay tough. The cheese and bacon go in after the heat is off so the cheese melts into the egg instead of frying onto the pan.

Packing

Egg powder, dried vegetables, and seasoning go in one bag. Sausage, cheese, and bacon bits ride separately since they are the greasy ones. Tortillas flat against the back panel of the pack.

Variations

  • Skip the tortillas and stir in a handful of potato flakes for a heavier bowl.
  • Hot sauce packets do more for this than any extra seasoning.
