Ingredients

Freeze-dried cottage cheese powder 1/2 cup dry equals about 1/2 cup rehydrated
Dried cucumber slices 2 tbsp dehydrated at home, thin
Dried red or yellow bell pepper 2 tbsp
Sun-dried tomatoes 2 tbsp chopped small, not oil-packed
Dried scallions 1 tbsp
Salt-free everything bagel seasoning 1 tsp

Method

  1. Put the dried vegetables and scallions in the jar with 100 ml of cold water. Let them sit 20 minutes, or overnight in the pack.
  2. Add the cottage cheese powder and the last 50 ml of water. Stir until there are no dry pockets.
  3. Wait five minutes. It thickens as it goes.
  4. Scatter the bagel seasoning over the top and eat straight from the jar.

The original is a fridge dish: wet curd, raw vegetables, no cooking. The curd is the problem on trail, so this uses freeze-dried cottage cheese, which rehydrates cold and keeps most of the protein. That protein is the whole point — close to 30 grams for under three ounces carried.

The vegetables get a head start because dried pepper and tomato need real soaking time while the cheese powder needs almost none. Add them together and you get chalky cheese around leathery pepper. Use salt-free seasoning; the cheese powder is already salty enough on its own.

Packing

Vegetables in one bag, cheese powder in another. They rehydrate on different clocks, so keeping them apart until camp matters. Seasoning in a tiny bag on top so it stays crunchy.

Variations

  • Skip the soak and eat it as a dry crunchy scoop with half the water.
  • A squeeze of lemon powder cuts the richness if you are eating this at midday.
