Ingredients

Method
- Put the potatoes, onion, pepper, mushrooms, and greens in the pot with 300 ml of water. Bring to a boil, then take it off the heat and lid it for five minutes.
- Check the mushrooms. If they still crunch, add a splash of water and give them another two minutes over low heat.
- Whisk the egg powder into 50 ml of cold water in your mug until there are no lumps. Lumps do not cook out.
- Cook off any standing water in the pot, add the oil, then pour in the egg. Stir constantly over low heat until it sets, about a minute.
- Salt, pepper, garlic, hot sauce. Eat from the pot.
Camp breakfast defaults to sugar: oats, bars, sweetened granola. This is the other direction, and it comes from an ordinary home breakfast saute — a pan of onion, pepper, mushroom, and greens with an egg on top. Everything in that pan dehydrates well, which is the only reason it works on trail.
Order matters. The vegetables and potatoes need real soak time, and the egg needs almost none. Rehydrate first, drive off the water, then add the egg last and cook it fast. Reverse that and you get rubber suspended in vegetable broth. The oil is not optional either — powdered egg is lean and sticks to a dry pot.
Packing
Vegetables, potatoes, and seasoning go in one bag. Egg powder stays in its own bag so it doesn't absorb moisture from the vegetables and clump.
Variations
- A handful of freeze-dried sausage crumbles added at step one makes it a bigger meal.
- Skip the egg and stir in instant refried beans instead for a vegan version.
- Dried sweet potato in place of the hash browns cooks in about the same time.
