Ingredients

Method
- Build a small fire and let it burn down to coals. You want steady low heat, not flames.
- Melt the butter in a 10-inch cast iron skillet over the coals. Stir both sugars in until the mix looks wet and glossy.
- Pull the skillet off the heat and let it cool for a minute. Whisk the egg powder with 6 tbsp water in a cup, then stir it into the butter along with the vanilla.
- Add the dry premix and stir until no flour streaks remain. Fold in the chips.
- Level the batter across the pan. Set the skillet on a bed of coals and put the lid on with 12 to 15 coals on top.
- Bake about 20 to 25 minutes. The edges should be set and pulling away, the center still soft.
- Take it off the heat and let it sit five minutes. Eat straight from the pan.
This is a home dessert dragged outdoors. The original mixes everything in the skillet and finishes it in an oven at 170 C for 20 minutes. Coals do the same job if you keep them low: a bed underneath and a ring on the lid gives you top and bottom heat without a hot spot burning the bottom out.
Two changes matter. Fresh eggs are the one ingredient that will not ride in a pack, so powdered whole egg goes in instead and rehydrates in a cup. The ice cream is gone for obvious reasons, and it was never doing much except being cold. Underbake the center a little. It keeps setting in the hot pan after you pull it, and a cookie you can scoop is the point.
Packing
Flour, both sugars, salt, and baking soda go in one bag at home. Egg powder in a small bag of its own so it does not clump against the sugar. Butter in a screwtop tub in the cooler if you have one, in the pack if you do not. Chips separate.
Variations
- Swap the powdered egg for 3 tbsp ground flax in 6 tbsp water and use oil instead of butter for a vegan pan.
- Half the chips replaced with chopped dried cherries cuts the sweetness.
- A cup of powdered milk whisked with cold water and a little sugar, then chilled in a stream, stands in for the ice cream.
