Ingredients

Leftover fries 4 cups any cut; shoestring, waffle, wedge, steak fry all work
Salt to taste

Method

  1. Pull the fries out of the cooler while you build the fire. Cold fries hitting a hot pan steam themselves.
  2. Set a dry cast iron or steel skillet on the grate over a bed of coals, not flames. No oil. The fries already have plenty.

This is a leftovers problem, not a recipe. Restaurant fries go limp within fifteen minutes of leaving the fryer, and the limpness is water: steam trapped under the crust softens it from the inside. Dry heat drives that water back out. The original method used an air fryer, which is just a small convection oven. A dry skillet over coals does the same job with contact heat instead of moving air, and it is the only version of this that exists at a campsite.

No oil goes in. Fries are already fried, and added fat makes them greasy rather than crisp. The single-layer rule matters more than the timing: pile them up and the ones underneath steam the ones on top. Coals over flames, because flames scorch the outside before the middle warms through. This one belongs to car camping. It needs a cooler, a real pan, and fries you drove home from somewhere the day before.

Packing

Fries go in a rigid container in the cooler, not a bag. Crushed fries turn into hash. Keep them off the ice block so they do not get wet.

Variations

  • Thin shoestrings need about half the pan time. Steak fries and wedges need the full eight minutes.
  • A shake of chili powder and garlic salt at the end covers up whatever the fries lost overnight.
