Ingredients
| All-in-one pancake mix | 1/2 cup | about 2 oz |

| Freeze-dried eggs | 1/4 cup | rehydrates to about 1 scrambled egg |
| Shelf-stable bacon | 2 slices | about 1 oz |
| Pure maple syrup | 2 tbsp | or honey, if you prefer |
| Oil | 1 tbsp | carried as a packet or in a small dropper bottle |
Method
- Boil about 200 ml of water, remove from heat, and stir in the freeze-dried eggs. While they sit covered for 2 minutes, mix the pancake mix with about 100 ml of water in a cup to form a thick batter.
- Heat the oil in your pan over medium heat. Pour in the reconstituted eggs and scramble gently until set, about 2–3 minutes. Transfer to your plate.
- Pour the pancake batter into the same pan and cook for about 3 minutes, until the bottom is golden and the edges look dry. Flip and cook the other side for 2–3 minutes.
- If the bacon strips fit, add them to the pan for the last 3–4 minutes. Otherwise, warm them on a stone near the fire. Plate everything together and serve with syrup.
Freeze-dried eggs reconstitute quickly and don’t need a cooler. Shelf-stable bacon gives you real smoke and meat fat you can’t get from the trail diet. Cook sequentially in one pan: eggs, then pancakes, then bacon. You have time on a car-camping morning.
Bacon is the key. It brings fat and salt to what would otherwise be carbs and water. The syrup is dead weight anywhere else, but weight means nothing when parked. One pan, one fire, and you’ve got breakfast that tastes like home.
Packing
Mix the pancake mix and freeze-dried eggs into a quart freezer bag at home. Pack the bacon separately in a small bag. Carry oil as a packet or in a dropper bottle. Use any squeeze bottle for the syrup.
Variations
- Fresh berries or sliced bananas, if available.
- Instant coffee powder stirred into the batter makes mocha pancakes.
- Powdered peanut butter mixed with water can replace syrup for a protein boost.
