Ingredients

Dried sliced mushrooms 1 oz about 8 oz fresh once rehydrated
Dried spinach flakes 1/2 cup packed; dehydrate a 12 oz bag at home
Dried minced onion 2 tbsp
Garlic powder 1/2 tsp
Ghee 1 tbsp does not need a cooler
Whole milk powder 3 tbsp
Grated parmesan 1 tbsp the hard dry kind in the green can
Salt 1/4 tsp
Black pepper 1/4 tsp
Ground nutmeg 1/8 tsp

Method

  1. Put the dried mushrooms, spinach, and onion in the skillet with 300 ml of boiling water. Let them sit off heat for ten minutes.
  2. Pour off any standing water. You want the pan damp, not swimming.
  3. Add the ghee, garlic powder, salt, pepper, and nutmeg. Cook over medium heat two or three minutes until the mushrooms stop tasting like paper.
  4. Whisk the milk powder into 100 ml of water and stir it in. Bring it to a low simmer.
  5. Make six wells in the vegetables and crack an egg into each. Cover the pan with foil or a lid.
  6. Hold it at the lowest heat you can manage for seven to ten minutes. Whites set, yolks still soft. A campfire needs coals, not flame.
  7. Kill the heat, scatter the parmesan over the top, and serve straight from the pan.

Baked eggs need an oven, which nobody carries. The fix is a covered skillet over low heat: the trapped steam sets the whites from above while the pan works from below, and the result lands close enough. Coals give better control than a roaring fire, and a canister stove on its lowest setting is easier still.

Everything wet in the original became a powder. Dried mushrooms and home-dried spinach rehydrate in the same water you would have drained away, whole milk powder stands in for the cream, and ghee replaces butter because it keeps at ambient temperature for weeks. Nutmeg sounds odd in a mushroom pan and is doing real work — it rounds off the tinny edge that reconstituted milk brings.

Packing

All the dried vegetables and seasonings go in one bag at home. Eggs travel in a hard plastic egg carrier or get cracked into a wide-mouth bottle before you leave the car.

Variations

  • Six tablespoons of powdered egg whisked with 3/4 cup water, poured over the vegetables and stirred until it sets, makes this a backpacking meal with no shell risk.
  • A handful of crumbled bacon or a diced summer sausage turns it into a full dinner.
