Ingredients

Whole wheat flour 2 cups
Powdered whole milk 1/3 cup buttermilk powder if you can find it
Baking powder 4 tsp double-acting, and check the date
Brown sugar 2 tbsp
Salt 1 tsp
Powdered egg 2 eggs worth about 4 tbsp; optional but it binds
Vegetable oil 1/4 cup plus more for the pan dropper bottle
Water about 300 ml

Method

  1. Get the fire down to coals or set the stove low. A screaming pan burns wheat batter before the middle sets.
  2. Pour the dry mix into a pot or a heavy freezer bag. Add the oil and about 300 ml of cold water.
  3. Stir or squish until the lumps are gone. Let it sit five minutes while the pan heats. The bran needs that time to take up water.
  4. Wipe oil into the pan. Pour rounds the width of your palm.
  5. Flip when the edges look dry and the bubbles on top stop closing back over. Another minute or two on the second side.
  6. Keep going until the batter is gone. Wipe more oil in between rounds.

Whole wheat behaves differently than white flour. It drinks more water and it browns faster, which is why this batter rests before it hits the pan and why the fire stays low. Rush either one and you get scorched outsides over raw middle.

The original called for fresh milk or buttermilk and whole eggs. Neither travels, so both come as powder and go into the dry mix at home. Powdered egg is not required, but without it the pancakes are fragile and want to fall apart on the flip.

Packing

Flour, milk powder, egg powder, baking powder, sugar, and salt go in one bag at home. Oil rides in a dropper bottle. If it will be more than a few weeks out, carry the baking powder in a separate twist of foil so it does not go flat against the salt.

Variations

  • Skip the milk and egg powder, cut the water to 175 ml, and you have tortilla dough. Rest it twenty minutes, press thin, one minute a side.
  • Drop the sugar and stir in dried onion and pepper for something to eat with dinner instead of breakfast.
