Ingredients

Everything bagels 4 pack whole and slice at camp so they do not dry out
Cold-smoked salmon 8 oz leave sealed until the board goes out
Cream cheese 8 oz repack into a leakproof tub at home
Cucumber 1 sliced thin
Red onion 1/2 sliced paper thin
Capers 2 tbsp drained into a small jar
Fresh dill a few sprigs
Lemon 1 optional, cut into wedges

Method

  1. Pull the salmon and cream cheese out of the cooler right before you serve. Not before.
  2. Split the bagels with a serrated knife. Lay the halves cut side up along one edge of the board.
  3. Set out the salmon, cucumber, onion, capers, and dill in separate piles. Keep the wet stuff away from the bread.
  4. Let everyone build their own. Cream cheese first, then salmon, then toppings.
  5. Return the salmon and cream cheese to the cooler as soon as the first round is done.

This is a cooler recipe, not a stove recipe, so the whole thing lives or dies on cold management. Smoked salmon and cream cheese both sit in the danger zone fast on a warm morning. Keep them sealed and buried in ice, put them out for one round, then put them back. That single habit is most of the food safety here.

The board format exists to solve a real problem: assembled bagels go soft. Cucumber, capers, and onion all carry water, and bread absorbs it within minutes. Keeping every component in its own pile means the bagel meets the wet stuff about ten seconds before someone eats it. It also means four people feed themselves without four pans.

Packing

Cream cheese goes in a screw-top tub, capers in a small jar, sliced vegetables in one container. Bagels ride in a hard-sided box in dry storage, never in the cooler. Salmon stays in its factory seal against the ice, not swimming in meltwater.

Variations

  • Toast the cut sides in a dry skillet for two minutes. The crisp face keeps the cream cheese from soaking in.
  • No cooler space? Swap in canned or pouched salmon mixed with the cream cheese and skip the cold-smoked fish entirely.
  • Sliced tomato and cracked pepper instead of cucumber if the tomatoes are good.
