Ingredients

Method
- Put the pudding powder and milk powder in a wide-mouth jar or a sturdy freezer bag. Add 120 ml of cold water.
- Seal it and shake hard for a full minute. Lumps are milk powder that never got wet, so keep going past the point it looks done.
- Let it sit five minutes. It sets on its own, no cold needed.
- Layer in the cup: graham crumbs on the bottom, half the pudding, the brownie broken up, then the rest of the pudding.
- Spoon the fluff on top and press the chocolate square into it. Eat with a long spoon so you get all four layers.
The original is a fridge dessert: cold milk, a cold set, and a kitchen torch. Powdered milk replaces the liquid, which is the whole trick. Instant pudding sets on the starch and the milk solids, not on temperature, so once the powder is fully hydrated it firms up in a warm tent as well as it does in a refrigerator.
Shake time matters more than anything else here. Under-shaken powder gives you chalky pockets that never dissolve. The layers are not decoration either: graham crumbs on the bottom stay dry until the last few bites, which keeps some crunch in a dessert that is otherwise all soft.
Packing
Pudding powder and milk powder go in one bag, graham crumbs in another. Fluff travels in a small screw-top jar or a squeeze tube. The chocolate square goes in the middle of the pack where it stays coolest.
Variations
- If you have a stove and a spare minute, hold the marshmallow layer over the flame on a spoon to brown it.
- Swap vanilla pudding and add a spoon of cocoa powder if that is what the store has.
