Ingredients

Rice Krispie squares 6 squares store-bought is the point; homemade works
Chocolate candy melts 1 1/2 cups melts set firm at room temp, unlike bar chocolate
Graham crackers 3 sheets broken into small shards
Mini marshmallows 1/2 cup
Chocolate M&Ms 1/3 cup
Lollipop sticks 6 optional, keeps hands clean

Method

  1. At home, melt the candy melts in a bowl over hot water or in short microwave bursts, stirring between each. Stop while a few lumps remain and let the residual heat finish them.
  2. If using sticks, push one into the narrow end of each square before dipping.
  3. Dip each square to coat about three quarters of it. Let the excess run off the corner.
  4. Press on graham shards, marshmallows, and M&Ms while the coating is still wet. It sets fast, so do one square at a time.
  5. Set them on parchment and leave them alone until the chocolate is hard to the touch, about 20 minutes at room temperature.
  6. Pack them once fully set. In camp there is nothing to do but eat them.

This is a dessert that gets built at the kitchen counter and carried, not cooked. Candy melts matter more than they sound: they contain no cocoa butter, so they set hard at room temperature and stay set in a warm car. Real chocolate blooms and softens, and you end up with six squares glued to each other.

The toppings only stick during the short window before the coating firms up, so dip and decorate one at a time rather than lining up all six and racing the chocolate. Everything here is shelf-stable, which is why it beats actual s’mores when there is no fire or no patience for one.

Packing

Lay the finished pops flat in a hard-sided container with parchment between layers. Soft bags crush the toppings off. Keep them out of the sun and out of the tent, which is the hottest place in camp by mid-afternoon.

Variations

  • White chocolate melts and crushed graham instead of dark, for a different look.
  • Swap the M&Ms for pretzel pieces if you want salt against the sugar.
  • Skip the sticks and wrap each one individually for a pocket snack on a day hike.
