Ingredients

Large flour tortillas 4 keep them dry or they tear
Eggs 5 large beaten at home into a sealed bottle
Canned black beans 1 cup drained and rinsed before the trip
Red bell pepper 1 diced at home
Shredded cheddar 1/2 cup
Salsa 1/4 cup goes on after heating, not before
Olive oil 2 tbsp
Ground cumin 1/2 tsp
Salt 1/4 tsp

Method

  1. Set the skillet over the stove or a grate above steady coals. Add the oil and the diced pepper. Cook until the pepper softens, about four minutes.
  2. Add the beans, cumin, and salt. Stir for a minute so the spice hits hot oil.
  3. Pour in the eggs. Move them slowly with the spatula and pull the pan off the heat while they still look slightly wet. They keep cooking.
  4. Stir in the cheese, then divide the filling across the four tortillas and roll them tight.
  5. Wrap each burrito in foil and set the packets on the grate or at the edge of the coals, off direct flame. Turn every couple of minutes for about five minutes.
  6. Unwrap, add salsa, eat. Salsa inside the foil makes a soggy tortilla.

This is a cooler recipe, not a pack recipe. Eggs and cheddar want to stay cold, so it belongs on a car-camping or basecamp morning where a cooler is thirty feet away. Beating the eggs at home into a bottle is the part that saves the most time and mess in camp.

The foil does two jobs. It holds the roll shut so the burrito survives being handled around a fire ring, and it lets you warm one or two at a time as people wake up instead of serving everyone at once. Keep the packets near coals rather than over flame; the tortilla scorches long before the center is warm.

Packing

Dice the pepper, drain the beans, shred the cheese, and beat the eggs into a leakproof bottle at home. All of it rides in the cooler. Tortillas stay out of the cooler, flat and dry, or they will not roll.

Variations

  • Swap the beans for pinto and add a spoon of green chiles.
  • Pack the filling on its own and spoon it into fresh tortillas later in the trip.
  • No cooler on a short trip: use powdered eggs and a foil pouch of beans, and skip the cheese.
