Method
- Squeeze the mayo into a cup or the bagel bag, stir in the sriracha, and set it aside.
- Mix the guacamole powder with about 2 tbsp of cool water. Add the dried cilantro, onion, lime powder, and salt. Let it sit while you cook the egg.
- Whisk the egg powder with about 60 ml of water until there are no lumps. Lumps cook into rubber.
- Heat the oil in the pot over a low flame. Pour in the egg and stir slowly until it just sets, maybe 90 seconds. Pull it off early; it keeps cooking.
- Split the bagel, spread guacamole on one half and sriracha mayo on the other, pile in the egg, and press it shut.
- Wipe the pot with the last bite of bagel.
The original is a home-kitchen sandwich built on a runny sunny-side-up yolk, fresh avocado, and a fridge. None of that travels. Whole egg powder scrambles instead of frying, which is the point: a set scramble stays inside the bread and does not run down your wrist. Powdered guacamole rehydrates into a paste that clings, so it behaves like the mashed avocado the original wanted rather than sliding out the side.
Mayo packets are the shelf-stable trick here. They carry fat with no cooler, and cut with sriracha they do the work that both a condiment and a sauce would. The dried onion, cilantro, and lime powder are small weight for the acid and bite that keep this from tasting like plain egg on bread. Mix the sauce first so the egg goes straight from pot to bagel while it is still hot.
Packing
Egg powder, guacamole mix, onion, cilantro, and lime powder each go in their own small bag or one bag with the dry seasonings pre-blended. Mayo and sriracha packets ride in a zip bag so a burst packet stays contained.
Variations
- Add a slice of hard cheese or a foil packet of refried beans for another 100 calories.
- Swap the bagel for a flour tortilla and roll it into a burrito. Packs flatter, survives longer.
- Freeze-dried scrambled eggs work if you would rather rehydrate than cook.
