Ingredients

Dried diced sweet potato 1 1/2 cups dehydrated at home in 1/4-inch dice
Dried diced onion 2 tbsp
Whole egg powder 6 tbsp about 4 eggs
Shelf-stable sausage 4 oz summer sausage or a dry-cured chicken apple link, diced
Olive oil 1 tbsp
Chili powder 1 tsp
Smoked paprika 1 tsp
Cumin 1/2 tsp
Salt 1/2 tsp
Black pepper 1/4 tsp
Hot sauce packets 2

Method

  1. Put the dried sweet potato and onion in the pot with 300 ml of water. Bring it to a boil, then cut the heat and let it sit covered for 10 minutes. The dice should be soft with almost no water left in the pot.
  2. Pour off any standing water. Add the oil, the sausage, and all the spices. Fry over medium heat for 3 or 4 minutes, stirring, until the edges catch a little color.
  3. Whisk the egg powder into 100 ml of cool water in your mug until there are no lumps. Lumps do not cook out.
  4. Pour the egg over the hash. Stir slowly and constantly until it sets, about two minutes. Take it off the flame while it still looks slightly wet.
  5. Hit it with hot sauce and eat straight from the pot.

The original is a sheet pan in a 425-degree oven, which is not something you have. Everything here moves to one pot: the sweet potato gets softened by a soak in boiled water instead of dry roasting, then fried in the same pot to get some browning back. That soak is the whole trick. Dried sweet potato dropped straight into hot oil stays gravel.

Fresh eggs and refrigerated sausage are the two things that do not travel, so both are swapped. Egg powder rehydrated in a mug behaves like beaten eggs if you mix it cold and let it hydrate for a minute. Dry-cured sausage carries the fat and salt that the fresh links were providing. Pull the pot early — residual heat finishes the egg, and overcooked powdered egg turns rubbery fast.

Packing

Dried potato, onion, and spices go in one bag. Egg powder rides in its own bag so it stays dry. Sausage keeps at ambient temperature but sweats in heat, so double-bag it.

Variations

  • Skip the sausage and add a tablespoon of nutritional yeast for a meatless version.
  • A crushed handful of corn chips stirred in at the end adds fat and structure.
  • Cold mornings: make it a burrito with a flour tortilla.
