Ingredients
| Banana | 1 | pack it on top of everything or you carry pudding |
|---|---|---|
| Powdered yogurt or milk powder | 2 tbsp | vanilla flavored if you can find it |
| Granola | 2 tbsp | |
| Freeze-dried berries | 2 tbsp | strawberry or blueberry |
| Almond butter | 2 tbsp | single-serve squeeze packet |
| Chocolate chips | 1 tbsp | dark chips hold their shape in heat better than milk |
Method
- Stir the yogurt powder with about 30 ml of cold water in a cup or the corner of a bag. Go slow, it clumps.
- Split the banana down its length with a knife or a thumbnail. Leave it in the peel and use that as the dish.
- Spoon the thinned yogurt over the cut sides.
- Squeeze the almond butter on, then scatter the granola, berries, and chocolate chips.
- Eat straight out of the peel. Pack the peel out.
The original is a bowl of fresh yogurt and fruit, which is a refrigerator recipe. Powdered yogurt rehydrated with a splash of cold water gets close enough, and freeze-dried berries replace fresh ones without the bruising. Everything else already travels.
The banana is the reason to carry this on day one and not day four. It is the plate, the bulk, and the only thing here that will not last. Use the peel as the dish and there is nothing to wash.
Packing
Granola, berries, and chocolate chips go in one small bag. Yogurt powder stays separate and dry until you mix it. Almond butter rides in its own packet so nothing else gets coated.
Variations
- Skip the water and eat the yogurt powder dry as part of the topping mix. It works and saves a step.
- Swap the almond butter for peanut butter powder mixed thick if you want less weight and more protein.
- Dairy-free: use coconut milk powder instead of yogurt powder.
