Ingredients

Instant white rice 1/3 cup jasmine or regular
Freeze-dried beef 1 oz unseasoned, or break up beef jerky
Freeze-dried mixed vegetables 1/4 cup carrots, zucchini, onion
Bulgoji seasoning 1 tbsp store-bought or make your own
Toasted sesame oil 1/2 tsp the flavor is the point
Brown sugar 1/2 tsp
Salt pinch

Method

  1. Boil 320 ml of water.
  2. Add the rice, freeze-dried beef, and vegetables to a pot or insulated mug.
  3. Pour the boiling water over everything and stir once.
  4. Cover and let sit for 15 minutes.
  5. Stir in the bulgoji seasoning, sesame oil, brown sugar, and salt.
  6. Taste and adjust. Add a splash of hot water if the mixture is too thick.

Freeze-dried meals often taste underseasoned because flavor compounds evaporate with the water. This one doesn’t have that problem—it leans on salt and sugar the way bulgoji beef does in restaurants. The sesame oil is why this tastes like something interesting instead of like rice and salt.

The fifteen minutes isn’t wasted time. Freeze-dried vegetables need water to come back to life, and rice needs time to absorb. The brown sugar isn’t about sweetness; it balances salt and adds depth. Under-season it and it tastes like nothing. Over-season it and it tastes like a soup packet. The balance is the whole thing.

Packing

Mix rice, beef, and vegetables into a single quart freezer bag at home. Pack the bulgoji seasoning in its own small bag. Carry sesame oil in a dropper bottle or sealed vial so it doesn't coat everything else.

Variations

  • Make your own bulgoji spice: toast 1 tbsp sesame seeds with 1 tsp each garlic powder and ginger powder, 1/2 tsp salt, and a pinch of red pepper. Naturally gluten-free.
  • Use beef jerky instead of freeze-dried beef. Break it into small pieces so it rehydrates in the steam.
  • A packet of soy sauce powder or low-sodium soy sauce adds depth without more salt.
